There are some things that we eat that we just miss the memories tied up with eating them.
My husband wanted Cinnamon Rolls. But, nothing i found did it with soaking the wheat.
So, i tweeked a couple of different recipes to come up with this one.

| After 12-24 hours. i do this the next morning Mix 1 tsp salt 1/4 tsp baking soda 1 tsp cinnamon Add 1/4-1/2 cup flour Knead into dough |
Sprinkle with cinnamon and sugar i often just sprinkle enough to cover the surface. When i do measure, i use 1 tsp cinnamon 1/4 cup maple brown or turbinado sugar Optional: If you would like the sugar and cinnamon to stick better, coat the rolled out dough with soft butter or coconut oil. i've found recipes that say as much as 1/2 cup. i use about 2 Tbs, when i use it. Personally, i find that the cinnamon and sugar stick just fine to the soaked dough. |
Roll into a log i double (or even triple) this recipe most of the time that I make it. i cut my double batched into 12 rolls. If making a single batch, cut log into 6 or 8 pieces. Put onto baking stone or lay on baking sheet Let rest 30 minutes Bake at 400 degrees for 15-20 minutes or 350 degree for 25 minutes |
Rolling the dough very, very thin.
i started out rolling the dough like you see in the picture on the left.
But, it just wasn't enough cinnamon for my family.
So, i rolled it thinner. i much prefer it that way. If you prefer more dough to cinnamon, than you can roll it thicker.
