There is quite the debate about the benefits of soaking bread.
Why do i do it?
Simply, i feel better when i eat sourdough or soaked bread.

So, the next morning i add 1 cup of flour and 1 Tbs salt, and then i knead it by hand for a few minutes.
After kneading I shape the dough for whatever I am going to make.
Shape into 4 bread loaves, 24 rolls, 16 breadsticks or 16 hoggies, 2-3 pizza crusts
Cover with damp towel until doubled, about 1 1/2 hours.
I use this recipe for a number of different doughs-pizza, rolls, breadsticks, hoggies, round loaves, and of coarse a traditional loaf.
So here are pictures of the dough shaped and then after they have risen for about an hour.

With about 15-30 minutes left of rising time, you want to pre-heat your oven to 375.

Bake loaves at 375 35-40 minutes
Rolls and breadsticks cook much faster. I check them at about 20 minutes.

9 cups whole wheat flour (8 cups for soaking + 1 cup after soaking)
2 tsp yeast
7-8 Tbs maple syrup or sugar
4 cups potato water (recipe at the end)
2-4 Tbs olive or coconut oil
